Pumpkin Cake
PUMPKIN CAKE
Mix in beater:
3 eggs, beaten
1 large can evaporated milk
2 tsp pumpkin spice
1 cup sugar
½ tsp salt
1 large can pumpkin
½ box yellow or white cake mix
Spread this mixture in greased (or Pam’d) 9 x 13” pan… then
Sprinkle on top:
Remaining ½ box cake mix
1 cube butter, diced in chunks
1 cup nuts
Bake @ 350 degrees for 45-55 minutes (knife should come out clean… like pumpkin pie). This is a great substitute for pumpkin pie… Very easy and can be made the day ahead (refrigerated)….. serve with whipping cream or ice cream.

(This cake was served at a library Christmas party in 1990….. I asked for the recipe and have been making it for 23 years…!)
